Chicken Meatballs

I ventured into another cook yourself thin faster recipe yesterday…chicken meatballs. They were not as good as the kebabs I made last week but still tasty, but missing something and I am not sure what. I was skeptical about posting the kebab recipe but found lifetime TV posts the recipes on their site so since I am giving them credit here goes.

1 lb chicken-both light and dark meat

1 cup fresh wheat bread crumbs

¼ cups skim milk-although in the book it does not tell you to put it in, hmmm typo?

1 large egg

1 small onion chopped fine

¼ cup finely chopped fresh flat-leaf parsley

2 TB parmesan cheese

¼ tsp salt

¼ tsp pepper

1 14.5 ounce can crushed tomatoes-fire roasted.

So pretty much blend everything but the tomatoes and cheese together and bake them in the oven at 450 for 10 minutes then poor the tomatoes on top and bake more. I baked till the chicken hit 160 and then took it out and it continued to go up to about 160 degrees F.

I put it on top of noodles even though the book suggested crusty bread. I was hungry from moving boxes all day and needed the carbs so I boiled whole wheat spaghetti noodles.

They were good but are missing something. Anyone else want to try it that knows how to cook, and tell me what it needs? I would love to make them again. Here is the picture.

    As to the meatballs… I love to cook healthy and I'm Italian. I would say its missing a heafty dose of fresh basil and some oregano. I make Turkey meatballs all the time and the fresh herbs make them delicious. I didn't try your recipe but that would be my guess.

    Tawna, in my beef meatballs, I used beef mince, garlic, ginger, coriander, onion, egg, salt, pepper and chilli powder. It was nice and spicy. I lightly fried the meatballs and then put them on top of tomato base and baked the whole thing.

    If you are trying to lose weight, you can skip the frying part and directly bake them. Try this recipe. You might like it and it's not too heavy. You can use lean beef mince.

    I hope this helps. I will try to add this recipe on my blog with photos next time I make this.

    I am not sure what kind of chicken it was and the package is already thrown out. That could be the issue. The skim milk would have made them too runny anyway so who knows. What kind of spices did you put in your beef ones?

    I like the idea of having meatballs with noodles. I have tried simple beef meatballs before and they tasted good. Haven't tried chicken meatballs. It's probably the skim milk that made you feel something is missing. But I couldn't tell without tasting.

    Btw, what kind of chicken meat did you use?
