My swordfish kebab trial

I decided to get my cook yourself thin cookbooks out again. I love the recipes in them but with the moving and traveling I had to take a break from them for awhile.

There are 2 cookbooks, cook yourself thin and cook yourself thin faster. I used the cook yourself thin faster for the swordfish kebabs last night and mmmmm, they were awesome.

I learned how to roast my own red peppers and that was cool. The sauce was amazing. I watched the lifetime TV cook yourself thin episodes and this got me excited to try out the recipes. Most of them actually taste great. The other great thing about them is they give you the calorie count for everything so it is easy to watch your consumption.

I have attached a picture of my kebabs before and after they were cooked. I had cut way to many vegetables to I just threw the extra vegetables on the pan and cooked them without the skewer and they turned out yummy.

I would definitely suggest the cook books. I will post more recipes and pictures down the road as I make them.

The only change I will make next time is to add whole portabella mushrooms.

    Sisterllisa this is for you and anyone else that wants it. Since lifetime tv puts their recipes on line and I am giving the cookbook credit I think I will be fine. So here it is!

    soak 8-10 bamboo skewers for 30 minutes prior or use metal ones.

    Need:
    1 lb swrod fish
    1 zucchini (1/2 inch chunks)
    2 yellow sqash (1/2 inch chunks)
    cherry tomoatoes
    and what ever else you fancy on a kebab I put chunks of onions on mine

    Make the kebabs up and then make this marinade-or make the marinade before and put it on the pieces before yo put them on thekebab which ever.

    Marinade:
    3 tablespoons olive oil
    1 tablespoon red wine vinegar
    2 tablespoons fresh basil, parsley, or rosemary. If you don't have fresh then 1 tabelspoon of dried is fine.
    1/2 teaspoon salt
    1/4 reasopoon freshly ground pepper.

    Either marinade the meat and vegis on or off the kehebab for at least 30 minutes but I did for 3 hours and it was awesome!

    While they are marinading make red pepper sauces
    1/2 cup reduced fat mayo
    2 roasted red bell peppers
    1 teaspoon lemon juce (I actually put 2 in)
    1/8 teaspoon sale and fresh ground pepper to taste.

    Learning to roast a red pepper was cool. Put them on a broiler rack on LOW broiling and every few minutes turn them until you get brown blistered skin. Don't wait for it to go black or they will be ruined. Took a little while. Them put the HOT peppers in a ziplock and leave sealed for 20 mintues. After the skin comes off very easity.

    Add all the sauce ingredients together and eat, very yummy!

    You can make these with chicken or salmon too. I would even think steadk might be tasty. Let me know if you like them.
